Most projects use bitcoin core except for certain things so from the top of my head I can think of wasabi wallet. So that's kind of otherwise basically everyone Every man and his dog is using bitcoin core at least that's how it is currently. There are debates in the community about whether there should be multiple implementations or it should just be like no everyone just used the one because it's very important that the networks stay in sync.
