Food fortification seems to be an interesting and important route to look at because of the widespread consumption of the products that we're trying to fortify. The question then is how bioavailable? How easy is it to absorb that iron? And one of the issues, if you're going to do a country-wide fortification, is that you need to use a relatively cheap form of iron.
