Kale was literally the vegetable that took me into the whole food systems. I found out very quickly that kale was no longer carrying the medicine that we thought it was. That it was missing the alkaloids that were the anti-inflammatory and everything else that we would look to all of the cruciferous vegetables for is lacking in the scale that was grown through conventional methods. And what we came to realize is that this chemical that has become ubiquitous in our farming industry was blocking the enzyme pathways by which the medicine ends up in the food.
