Introduction

The book Salt by Mark Kirlansky is a whole book about salt. Every piece of food that you eat probably has some salt added to it or at least has some salt in it. It turns out that when you're on a more hunter-gatherer diet, you actually get enough salt from your food and don't necessarily need to supplement it. But once we transitioned to agriculture and started eating more farmed food, our diets shifted just enough that we needed to supplement with salt in order to survive. You really couldn't have an agricultural society without salt.
