There are a lot of different ways to expedite I Know we've talked about this to some degree over the past four or five four plus years. A small restaurant may not have a professional expediter the chef So chef sometimes even a line cook is an expediter what an expediter does is They're the organizer and facilitator of the tickets and the orders that are coming in the kitchen. There are ways that things are automated now We have one in Momofuku Las Vegas where it's a computerized system and it pushes tables up But even still I find that to be imperfect If you're in a big kitchen you might have three expeditors.
