How to Calculate the Force Between an Electron and a Proton?

Gravity is a different kind of force than electromagnetism as it requires a slightly different sort of mathematical construction to describe it. People have tried what you suggested like, well, let's build a quantum theory of gravity and think about exchanging little particles for those forces. They call them gravitons. And so far it just hasn't worked out yet.
