The Most Difficult Moment in the Kitchen
The most difficult thing in the professional kitchen is getting everybody sort of on the same page every single night. My happy moments in the kitchen are honestly being in the kitchen. Even when we're in the restaurants, Francis and, you know, on any given night between all three restaurants, we could serve a thousand people. That's probably what I'm at my most calm. Is what I know that we've got thousands of people to cook for.
