Introduction

Jamaican jerk cooking involves rubbing or marinating meat with a spice mixture. This method of cooking might have originated in 1655 by slaves who escaped when Jamaica was invaded by the British. The name jerk may come from the Spanish for dried meat. By the 1960s, jerk cooking had become popular outside Jamaica. Food sellers invented a modern barbecued style oven to cook jerks.
