After World War II, we started to think about food in a much more geopolitical way. The US has this very rich topsoil in the Midwest and we use that as a way to export food security to other countries. But you know, increasing and expanding farm production in the US meant that smaller farms really don't stand a chance like he Earl Butts, the secretary of agriculture in the 60s and 70s had an expression: We're going to farm from fence post to fence post. And so that's definitely relevant when it comes to food.
