The clicking collect option remains. You can still order a bike online, pick it up from your local shop and then you could really dial in the fit and get the mechanics there to set it up for you. I would be astonished if basically everyone doesn't adopt this model. People like it. There's very few problems. It's just the way the industry is going as a whole. If you read about a bike on the internet, you should be able to get it, you know, and it shouldn't require you to travel to a shop somewhere.
