How to Make Fruit Rock Candy
Lettered candy is made in the same manner as the fruit rock and simply requires good taste and practice. Lemon or sour drops: Cook your batch the same as for lemon stick, about 12 pounds. Wild cherry drops: Fill 3 quarts of water with 5 ounces of Horehound then strain through a fine sieve. All or part of clear scraps can be used to make wild cherry candies which use no cream of tartar or glucose.
