Banza's pasta has four ingredients, chick peas, pea starch, tapioca and xanthen gum. To get something similar to the gluton protein you want to use other proteins. The process of making bonds this posta is pretty much the same as it is for regular posta. They mix their chick pea flour with water to make dough, push the dough through an extruder, use it dye to make the shape. And guess who makes their dyes?
