i grow up in the mediterranean, and for me, olives and figs and pomegranates and lemons are holy fruits. My father has a hundred and fifty year old pomegranate tree in his house in crete. And i decided to get into maple, maple sugar and us. In march every year, when the sap runs about three weeks, late march, early april,. i have forty taps now, and it's called the sugar bush where the trees are located. And i tap the trees. Iave forty taps, and i collect the sap and boil it. It's very simple in many ways. But you can't use soap to clean it
