We don't even think about subtraction, and ther we don't notice it when it does happen. But it's also pretty difficult to subtract, sometimes more difficult than adding. In your example of the legos, it might take the same amount of effort to take away a lego as it would to put a lego on to a tower. There are all sorts of techniques that builders use to sort of cut corners by adding rather than subtracting. If we think it's going to be easy, we're never going to get there. So we need to know what we're in for.
