What's the Difference Between Sentience and Just a Really Good Chat Bot?

I generally don't think that non sentient things are able to have a conversation about whether or not they are sentient. So the question is, can non-sentient things do stuff that requires sentience to do? And that's kind of the logic that underlies the mirror test. We're interfacing with it.
