The Science of Eggs

Vallory has 15 years of research experience into the science and technology of eggs. When you heat the egg, the proteins in the egg white will change and become more unravelled. And so as this gell forms, the egg whites lose their transparency,. They lose this ability to flow about because they become more solid. So a lower temperature is better for frying eggs that won't stick. The higher the temperature, the stickier the eggwhite will become.
