There are so many different macterial species growing into them. And most of them, till a few years sir ago, we didn't work with them,. So people wouldn't care about yeso and there were no means to do the experiments. Then i think what has changed in in the recent years is that people have been able to cultivate a lot of those species. They can only grow on arobically, and so where no oxygen is around. Some of those assays, when you do want to do them a larger scale, it's much more difficult to do them under control environments.
