The malt process is very influenced by the outside ambient air in place that you're making them all. So if you establish very tight ranges for DP and color in particular, we have to malt differently to get to that desired end state based on the time of year. If you expect the same moisture in your malt all year round, we definitely are going to have to kill them very differently in summer and winter. By holding on to just a very tight range on one parameter, basically every other parameters will become a moving part. That's not good for consistency.
