Hash functions are used into capacities. One usage is directly in circuits, something like you design a protocol that uses a hash function and then you build a circuit of it. Another usage is simply recursive snark and incrementally very viable computation schemes which are based on recursively applying a generic to chunks of a computation. So ideally you want hash functions that rely on field elements because field elements is the native language of many proof systems.
