The Complexity of Cooking
After I retired from Microsoft, I'd build a house and have a big state of the art kitchen. And I naively thought, Hey, I shouldn't learn this because you know, I had this degree in French cooking... Why don't I go figure this out too? There was no big book. What the thing that's amazing about people is that people have been able to figure stuff out semi empirically before they actually had the theories to figure it out. Things that occur in cooking occur because of complex chemical reactions, complex physics. It's really hard to figure out.
