i am very disappointed when ribs don't fall off the bone. The chewy rib is not really my thing. I like it when it's been marinaded, ind a delicious sauce. Sometimes ribs can be a bit, you know, they just chuck it on and think that if you've taken the trouble to make a good marinade, that can elevate the rib to something quite extraordinary.
