Cecile: Today we're going to focus on some of the fermentation variables that can be manipulated to maximize thiol release. We've already done at least a half dozen episodes about thiols, so maybe as a quick refresher without getting too far into the weeds, explain the possible paths for a bound thiol to become a free thiol. The alpha-beta-insaturated carbonyl leading to the thryselphenylaczanol is like the most common one that will be formed when plant will go under stress. This type of precursors will be further metabolized down to either two type of dipeptide - cystain and glycine.
