The Benefits of Eating Fermented Foods
The science is just catching up. We know that breeding live microbes, that's what you're doing when you're eating fermented food. There are many more species than you get in probiotic tablets. You're getting bigger range, particularly with the kefirs and sauerkrauts. These microbes travel down through your gut. Half of them get wiped out by the acid in your stomach but the rest carry on to your lower intestine where most of the other microbes are. They seem to send off signals to these other microbes to make them healthier and produce healthy chemicals in return. It really improves the immune system. That's probably the main way it works.
