The Importance of Local Food

Belfast's cobbled hill street was like a part of, you know, Sienna. We could turn Belfast into Sienna, the red bricks and yeah, right. But that's okay, I better have a vision than not. Local food back in those days to anybody would say Ulster Fry or steak and chips. There was a reverse snorbery unless it came in from Britain on a boat or from France. It all started slowly falling into place.
