In almost every primary record that we have of any of like early Spanish conquistadors or later British colonists coming in, they talk about how widespread the corn fields were. And so that ability to learn from Native crops and processes and then of course to take over it is a pretty amazing transformation kind of a terrible one but also one that tells us a lot about the long history of the US.
