The Benefits of Friability in Malting
Friability would be your desert island instrument. It's a pretty simple method and it's not cheap to do but it gives me good information about how I did the malting process. Friability also tells us when we have those steely distal ends that maybe we got the kernel two-thirds of the way hydrated but we didn't get that distal end and it's still basically barley. If you blend under modified malt and over modified malt, you can still have a decent beta-glucan number. The thing is when you put that same malt in the friable emitter, those kernels that weren't properly modified, they don't break down and you can see that
