How to Make Eggs That Taste Good
Eggs are amazing from a chemistry standpoint. They're nutritional powerhouses too, after all they have to support an entire developing chick and they basically all taste good. So why don't birds just put in some kind of nasty chemical into their eggs to put the rest of us off? The accepted answer is that if a female bird was to put distasteful substances into the oak to deter predators, that might compromise the rate at which the embryo develops. And so there's a kind of trade-off. But what do scientists know about the different flavors of bird's eggs? This is an area of research in my mind that is still wide open, but of course difficult to test for
