Alex rushmer is the master chef at van der lysle, a new restaurant in Cambridgeshire. Each of his dishes are based on an edible part of a different plant. The local produce was so plentiful that he didn't feel the need to use meat or fish. It wasn't something he set out to do, but he found it compelling him to become more creative.
