The Importance of Tipping

The concept of tipping is rather new in China. It's just not part of our common way of thinking, it's foreign. But sometimes they will renegotiate the set up on price if circumstances have changed. And what happens when a server doesn't do a good job? Are we still expected to give them the wages that their employer is not giving them?
