Massachusetts has its own newish set of laws around sending organic waste to landfill. Jamie and his colleagues take in about a hundred to a hundred 20 tons of waste a day. Most of it comes from restaurants, universities, groceries, even farmers. They basically say that organizations and businesses that produce more than a ton of food scraps per week cannot throw any of it in the land fill.
