The Difference Between Doray and Dorey in Burgundy

Dorey and vert are different strains of aligote, possibly with clonal variation within each strain. Doray has more bunches, but smaller bunches and smaller grapes for the most part. Vert is mostly younger vineyards comprised of monoclonal plant material from nurseries which doesn't quite grow like massal aligote. Pierre Rapet uses wood for his aligote dore; he likes these large pudras because the fermentation in the vessel creates a movement that's similar to the number eight.
