To Make Latte Foam, You Have to Steam Milk

Professor Stephen Abbott: To make latte foam, you got a steam-some milk. But even that is beside the point, because it's not made from droplets of water. You cannot get a foam from condensed water, so it has to be air going in. So these ones, the steam ones attached to an espresso machine, are injecting steam to do the heating but they are also entraining the force of the steam going down in trains air.
