The Hospice to Bone auction was sometimes a thermometer or certainly a barometer showing what is the strength of demand at the time. The winemaker has to produce wines which can be tasted within six or seven weeks of the harvest. There are two cuvets of merso for instance which are not premier crew mercets and no growing merso would dream of putting their basic village level in 100% new oak.
