A lot of writing that gets saved was stuff essentially permanently fired and therefore preserved by an actual disastrous fire. The material that survives, we cannot be sure how reflective it is of the stuff that people were actually using. Not everybody is going to get the kind of burial that survives in a particular culture. We're not getting a representative sample of all of the written texts from a culture.
