I was a little bit, I mean, nervous really isn't the word, but I had some trepidation to get into it because I've obviously struggled with proper sourdough. And so I used double zero flour. I used that pizza flour, right? The more super finely ground stuff. Surprisingly easy, especially if you do like Neapolitan style,. You're kind of just pulling it out and you're not like trying to make some perfect round thing. Then, yeah, I don't know what it was, but something about the crust was perfect... It was nice and thin in the middle.
