The first time this was done, the first sort of two solar mass neutron star that we saw was from Demarest at all in 2010. This was a big deal because we hadn't seen any neutron stars that massive before. And so exactly like what you already said, I mean, being able to find more and more massive neutron stars lets us try to learn something about that mass that we don't really know yet.
