The goal is to really have that skin be shatteringly crispy, right? Breno and wan i sow do one more question from the book before we get to our callers. Daniel: I read in your book this absolutely bonkers idea that you can take a frozen steak, throw it under the broiler and get a crisp crust in a medium rare in ten minutes. And so daniel made this claim, and i was like, no, like home nonon bats. Buti in testing all these recipes, obviously i did it. So let's give the meat a little credit here.
