Columnar epithelia are tall, long, rectagonal shaped cells. They produce something that it can release into the hollow lumen of the environment it's facing. And so as we spoke earlier, these may also have microvilla on them to increase that absorptive capacity - particularly when you're in the intestines. So they like the stomach pits, let's say, or gastric pleads.
