The Indian Corn, a Problem During the Potato Famine
Before we had really nice, soft kernels, one one of the oldest ways we would eat corn was to crush it up and mix it with a liquid. This was a major problem during the irish potato famine because they were importing indian corn which was seen as lower quality. The government eventually developed a method that involved soaking hay in water for several days then boiling it before adding some milk or grease. But even after being boiled, the corn still cut people's stomachs.
