The Cascade of Events That Happen When You Eat Carbohydrates
CGM monitors work through a small sensor that's inserted into the interstitial fluid. And so then it estimates blood glucose through a reaction, which is called the glucose oxidase reaction. There has been a number of studies that have validated CGM's and shown that they are reflective within about 10% of blood glucose. But it's just important to know that when you are looking at this data in real time, there is that kind of 10 minute time lag between when you see those results with low glucose.
