One Pot Meals - Roasted Vegetables With Protein

I don't really recommend olive oil for roasting vegetables because it is you are cooking at such a high. With the one pot meals, usually doing like a roasted veggie with a protein kind of thing. I tried to make them complete standalone is complete meals with enough protein and have at least one veggie in there. But they could stand alone from a protein and veggie sample.
