i've debated wegans on my podcast multiple times, and i say, show me the interventional study that shows that red meat is bad for humans. And it just doesn't exist. Like what we find over and over is that it's good for humans and it's not inflammatory at all, or that that doesn't even it's just great. So observational studies can be beneficial as a preliminary experiment to generate a hypothesis and then test the hypothesis with an interventional study.
