The History of Cakes
Gale beckon talks about the history of hand beaten cakes. The first commercial mixures were manufactured in 18 50. A lot of cakes depend on the way you beat them to get their volume, meaning to be light and airy. But i think the modern cake is consistent with mechanical ways of mixing.
