Holenas is run by a husband and wife team who have owned the restaurant for decades. The pork Lao Lao at Holenas is marinated short ribs that get slow cooked within the Louo leaves. Pee Pee Kaula means different things within Hawaii, but their recipe is very secret. If I had to try to recreate it, there is soy sauce, there is sugar, there is garlic. Perhaps there is a kiss of ginger, but not much else.
