The encyclopaedia of pasta is the closest thing there is to a complete list of all the pasta shapes. Oretta zanini devita spent 20 years scouring every corner of italy to find local pasta shapes and traditions. She learned that often different regions have different names for the same shape. That's why theye are about 300 shapes with 12 hundred names.
