We've been doing agriculture for about 11 thousand years. But before that, we were hunser gatherers. We have historically consumed fongi organism quite a bit. And so when you covered it, had fungi ever been used to produce proteins in this way? Absolutely actually. The technology was very different from what we do. What we developed is a new type of fermentation,. which we call air liquid interpace fermentation. It uses an organise that has natively a filaments texture. So that texture kind of mimic muscle filament. Just as you can use animal proteng to do a wide range of things.
