Baking is like a party when it's proving inasmuch as you've got a lot of activity. I think what divides a really, really good baker from the rest of usas they have such good feel. It's just to do with feel in the hand, knowing how to manipulate this thing. And then after that point, we'll bring the temperature down. The ovens away hotter, the malia grease hotter than ours. That's one reason why they get spring, which is very difficult to achieve at home.
