When i cook venison correctly, it's still juicy and tender. It just cooks faster than a ribbi that i would get at cosco or something like that. The only other thing that can affect it is if it starts getting freezer burn. I usually also save those unoslittle silica packets you get in random things to make jerky. Cause e things drive me crazy.
