The Power of a Little Change Can Make a Big Difference
Capsaicin is an organic molecule. It's in the same group as vanilla, but it has a different side chain. The receptor that it triggers triggers as a pain receptor from heat. So it sends a signal to our brain that the thing is hot. And our brain takes that as bad pain.
