The Variability of the Sensor Smell

People can either smell Androstanone or not. Different populations show different variants of the gene that produces this receptor. In Europe and Asia, there is an increased tendency for people not to be able to smell this odor because of changes in their DNA. The areas where the versions are more prevalent coincide with pigs being domesticated. If you eat bormate, so if you eat pork from a male that has not been castrated, a lot of people who can smell the odor think it tastes unpleasant. It's got what's called bortaint.
